As far I know, Himalaya, as it is called, can vary in height anything from a tiny bit above max height (normal mountain max height tool) to stone wall height above max height.
If you place max height then lay loads of wall tiles over that and then plant stones on top then you get full himalaya. If when placing the stones you "overhang" the wall tiles then you get half-wall height himalaya. and if you "overhang" that when placing another big stone then you get quarter wall hieght and so on.
The himalaya as shown in the tutorial in palat's link shows the full height himalaya as far as I know...
