Firstly, I thought this is a castle for Richard, as the style is quite... "Richard-ish", square-shaped. Rat has only 1 quarry, so setting up this castle with lots of towers and thick walls.
You included siege engines, what means a real improvement of Rat's defenses (double firepower!).
In matters of defense, instead of one row of killing pits between the 2 layers, I'd prefer one extra row of high crenelated wall here and one row of killing pits around the outer layer of walls.
Whenever you make a screenshot from a castle for the Rat, do that in a game with "many troops" and "computer advantage" as start settings as this is the only way to make Rat place some nice amount of archers on his towers.
Furthermore, you could add some spearman-spots as Rat will have a relatively big group of spearmen patrolling between them (if you put them all onto the keep, the keep will be guarded better).
And... adding one water pot or at least a well would be fine. This would mean a bit of a change in the layout of the buildings, but as the hovels don't need to be accessible (and if they start burning, they burn down almost immediately, so other buildings can't be constantly re-lighted by them), it is possible to put at least a well in here.
The weapons production could be bigger (to give Rat the chance to make at least some gold - by selling spears - and a few more archers).
Moreover, you could add a 3rd ballista and mangonel.
An enlarged version of this castle would be nice for Richard Lionheart, providing him with 8 square towers instead of his normal 4, thicker castle walls, killing pits and low walls in front of his towers.

Well, the Rat is a very special character... on the one hand, it's seems quite hard to find a suitable form for his castle, but on the other hand - as his normal castles are quite... strange ...and originally - you can do almost everything you can think of.
And as Rat seems to love strange mazes, stairs and layout, you could build a labyrinth fortress including paths on different wall heights, stairs, etc. Just be creative and experiment a bit!
